STORY

Cacao with a unique genetic profile.
This bar is crafted using "Guasare"—a Criollo-variety cacao harvested in northern Venezuela.
Cacao is classified into over 16 varieties based on genetic structure, and among these, the Criollo variety is considered the rarest and most delicate.
Guasare, in particular, is an exceptionally ancient variety; because it cross-pollinates easily with surrounding trees, obtaining beans with a high degree of genetic purity is a significant challenge.
The level of purity can be determined by the color of the beans: a higher proportion of white beans indicates greater purity. For this bar, we have sourced Guasare beans with the highest possible level of purity.

Capturing complex aromas.
To preserve the intricate aromatic profile of Guasare cacao beans within a single bar, we employ a meticulous process of roasting and aging. Upon the first bite, you are greeted by notes of fermentation, which evolve into the rich sweetness of prunes and grapes, ultimately giving way to the profound, deep character of dark chocolate. We invite you to savor this unfolding journey of flavors and its lingering, long-lasting finish.
