Cacao with special genes.
We use "Guasare," a Criollo cacao grown in northern Venezuela.
Cacao is classified into over 16 species based on differences in its genetic makeup, but of these, Criollo is said to be the rarest and most delicate.
Among these, Guasare is a particularly ancient species, and due to cross-breeding with other trees in the area, it is one of the most difficult varieties to obtain with high purity.
The purity of the beans can be determined by the color of the beans. The higher the proportion of white beans, the higher the purity. This bar is made using Guasare beans of the highest possible purity.
Locking in complex aromas.
Guasare cocoa beans are carefully roasted and aged to lock in the complex aromas within each bar. The fermented aroma you sense the moment you put it in your mouth transforms into a rich sweetness reminiscent of prunes and grapes, and finally the deep flavor of dark chocolate slowly emerges.
