STORY

A flavor unique to Kyoto.
Available exclusively at our Kyoto store, this "Kyoto Uji Matcha" chocolate bar is crafted to ensure that the essence of the matcha—its color, taste, and aroma—comes through in its purest form. From the moment you unwrap the *washi* (traditional Japanese paper) packaging to the instant it touches your palate, the rich flavor of Uji matcha unfolds.

Centered around a carefully selected matcha.
The core of the flavor comes from IPPUKU&MATCHA’s Uji matcha—a blend of matcha harvested in Uji, Kyoto, distinguished by its refreshing aroma and a crisp, savory depth.

The perfect ratio, finally discovered.
I initially tried pairing it with an Indonesian milk chocolate—one that carries a tea-like quality reminiscent of Earl Grey—but the two distinct profiles clashed, and the vibrant green of the matcha became dull and muted.
The solution to this color issue came in the form of a white chocolate from Ghana. By incorporating it, I was able to bring out the beautiful, authentic green hue of the matcha. Adding this, along with a milk chocolate made from Palo Blanco cacao, created a perfectly balanced blend—resulting in a bar I am truly proud of.
