Located in the Indian Ocean off the east coast of Africa, Madagascar is renowned for its high-quality cocoa beans and vanilla. We source our beans from Bertil Åkesson's Bejofo farm, which supports most of the world's Madagascar bean-to-bar chocolate. Our green bars are characterized by their rich, clear, fruity aroma.
Making the most of its distinctive acidity.
We roast the chocolate slowly at a low temperature to preserve its unique fruitiness. It's then conched, adjusting the texture to achieve a creamy texture, bringing out the refined brightness of the fruit.
This meticulous crafting process results in an irresistible chocolate with a fermented alcoholic flavor and fruity taste. Pair it with red wine for the ultimate pairing.
