Introducing "Piura Blanco"—a new bean-to-bar chocolate created to commemorate our 10th anniversary.

It is crafted using high-quality cacao harvested in the Piura region of northern Peru, near the border with Ecuador. This chocolate bar is defined by its fruit-like aroma and herbal notes. It offers a unique flavor profile: a distinct herbal character, complemented by a subtle acidity, delicate floral undertones, and a mellow, lingering hint of astringency.

STORY

High-quality cacao grown in northern Peru.
We use cacao beans harvested in Piura, in northern Peru.
In the high-altitude, low-rainfall climate of Piura, exceptional cacao beans are cultivated.
These aromatic beans offer a flavor profile characterized by herbal notes, a subtle acidity, and delicate floral undertones.
To mark our 10th anniversary, each product is wrapped in elegant, festive *washi* (traditional Japanese paper).

62-Hour Conching
These cacao beans are so delicate that even a slight increase in roasting heat can cause their aroma to vanish.
For this reason, we roast them slowly at a low temperature—taking the time to ensure the inherent fruity notes of the beans remain intact.

During the development phase, we conducted numerous tests, experimenting with various conching durations to determine which length would best bring out the unique character of the Piura beans. Through repeated tastings, we explored the perfect balance of flavor and aroma.
The answer we discovered: 62 hours.

This extended conching process tempers the acidity, allowing the rich aroma and smooth, melt-in-the-mouth texture to harmonize in the ideal way.
