Mixed into the bars is "Full Moon Shiho," a sweet and mellow Izu Oshima "Full Moon Shiho." Manufacturer OHSHIMA OCEAN SALT moved to Oshima in 1976 and has tirelessly produced salt with the belief that they want to revive natural salt, an essential ingredient for the human body, in an era when reagent sodium chloride (table salt) was common on dinner tables.

Sparkling Crystals in a Giant Homemade Dome

Deep seawater packed with minerals, pumped up from over 200 meters underground, is sprayed into a giant dome handcrafted by first-generation owner Akihiro Sakamoto, where it's concentrated over a period of approximately one month using the abundant natural energy of the sun and wind. The concentrated seawater is then transferred to a concentration tank and concentrated for two days and nights until it's reduced to less than two-fifths of its original volume. It's then boiled in a crystallization pot, where crystallization gradually begins from the surface. Hiromi, the second-generation owner, says the glittering crystallization is "like a reward for over a month of painstaking work." The resulting crystals are then separated from the bittern in a centrifuge, resulting in natural salt.

The Special Power of the Full Moon
So, how is Full Moon Shiho made? The surprising answer: "It's the exact same method." "On full moon days, crabs and shrimp molt, and corals spawn all at once. There's definitely some special power at work, but it's a mysterious thing, and there's still a lot we don't understand about it." Even so, when seawater pumped up on a full moon day is used, there are visible differences in the size of the crystals and the amount of scum produced during the production process. The flavor is subtle, yet undeniably soft. The mellow taste spreads throughout your mouth, slowly seeping into your body.
